Happy New Year 2011
Mushroom Roll-Ups
2 cups finely chopped mushrooms
4 slices bacon, finely chopped
1 cup onion, finely chopped
1 pkg cream cheese (125gm)
15 slices or 7 lengthwise slices of bread
1/4 cup melted butter
**In a skillet, sauté bacon, onion, mushrooms for 5 min or until tender, stir in cream cheese till melted. Set aside. Trim crusts from bread & roll to flatten. Spread each slice with about 1 Tbsp filling. Roll up like jelly roll. Secure with toothpick or roll each tightly in saran wrap. Chill 1 h. before baking or freeze in a single layer, then package in air tight container or freezer bags. To bake, brush rolls with melted butter & bake 15 mins. at 375* - 400* Cut in pieces & serve.
** Note: Cook bacon till crisp & drained of all fat. Also add salt, thyme, dill weed, soya sauce to taste. Use spices sparingly as not to overpower the mushroom flavor. ........Enjoy
